Okara Bread Item Number: okarabreadIn a large bowl, mix 2 cups brown rice flour, 2/3 cup amaranth flour, Pizza (or any) seasoning, 1 tsp. baking powder, 1 tsp. baking soda and 1/2 cup arrowroot (or tapioca flour). I also add sunflower seeds and flaxmeal, salt. Mix 1 or 2 bunches of hot okara with some soy milk, add 1/4 cup oil (I use grape seed oil) and 1/2 tsp. vitamin C crystals. Pour the liquid into the flour bowl. Stir briefly to moisten dry ingredients. Pour into 1 large or 2 small greased loaf pans and bake at 350 for 45 - 55 minutes. Let stand in the pan for 10 minutes, then turn the loaf out onto a wire rack to cool.
